Serving the food of the African diaspora, Love, Peace & Sol Cafe launched in Denver's Park Hill neighborhood, Westword reported. The four day old eatery is entirely vegan and chef-owner Lonni Byrd is committed to serving a healthy version of what guests may think soul food means.
In the morning, there are burritos, steel-cut oats, and spelt toast, as well as fresh juices. For lunch, the eatery offers soul-food classics like black-eyed peas, collard greens, corn bread, as well as split-pea soup, all of which are cooked without pork and lard. In its stead, there is coconut milk and Caribbean and Gulf Coast spices.
Love, Peace & Sol Cafe is a cash-only spot that is open for breakfast and lunch service Tuesday through Friday from 8 a.m. to 2 p.m. Brunch will be served on the first Sunday of every month, with the first one on March 6.
