Mark Dym, who owns the popular Racca's pizzeria in the Ballpark neighborhood with his wife and partner Kristy Dym, will open an outpost of his Neapolitan-inspired pie shop at the Colorado Mills Mall during the second week of April. Construction is in full swing at the space but the most important element, a pizza oven, made its way into the space.
Mark and Kristy Dym opened their first pizzeria in 2008 under the name Marco's Coal Fired Pizza. Last year, as fast food pizza chain Marco's expanded its reach in Denver, the Colorado-born pizzeria switched gears are rebranded to Racca's, a short for Kristy's maiden name, Latorraca. The Dyms have received numerous awards and much acclaim over the years, including -being named Independent Pizzeria of the Year by Pizza Today.
Racca's currently has two locations in state. After the third opens at the Colorado Mills Mall, an out-od-state expansion will follow with an outpost in the Old Yellowstone District of Casper, Wyoming.
