Cocktails are finding their way into the taps of some of Denver's best restaurants and bars. These aren't the down-and-dirty Jose Cuervo draft margaritas, but rather precisely executed spirit combinations that are remain stable when combined and stored that way.
Adam Hodak, beverage director at Bonanno Concepts, has been a pioneer of the trend in Denver, beginning at the Lancer Lounge. "Wine started going on draft a few years ago, and that’s when the technology was there to allow for cocktails to go on draft properly. What happens is, high acid eats away at the tubing and the stainless. So wine and cocktails taps have to have a different type of tubing and stainless," he explained.
Jake Linzinmeir of the Nickel, explained how drafted cocktails work at the restaurant located in the Hotel Teatro: "The cocktails are made in large batches, ranging from 3 to 15 Liters depending on the drink. Some are then aged in oak barrels. Then they are placed in Micromatic kegs, which are metal kegs that are pressurized with a Nitrogen gas, which allows them to be poured from the spout."
