Troy Guard, executive chef and owner of TAG and TAG Raw in Larimer Square, shared some Thanksgiving traditions with USA Today. "In Hawaii, every year my dad and I do the turkey 'imu' style or on a huli huli machine (aka spit)," Guard said, referring to his childhood in Oahu and Maui. Guard said his father cooked 42 turkeys this way last year, but what in the hell is "imu" style? Basically the meat is cooked in an underground over (the "huli huli"). As for what Guard likes with his imu turkey — turkey neck fried rice and greens beans with octopus.
