Charlie Palmer's District Meats opens today in LoDo after three months of construction. Palmer told Colorado's Vino Tastings during a podcast interview that District Meats (the more elevated restaurant of the two sisters, getting most of the attention) isn't "A lot of fancy stuff — not a lot of glitz and glitter — but like really basic in a comfortable setting." Unlike his other, more glamours restaurants (now 12, in total), Palmer describes District Meats as a more casual approach — more "down-home." The menu will primarily feature secondary cuts of meat, as Palmer wants guests to try cuts that deviate from typical steakhouse fare like chops, tenderloins, T-bones, ribeyes and filets. Wazee Wood Fire Pizza will open in December and both menus have a local emphasize with lots of Colorado meat, veggies and brew.

Palmer said many of the furnishings at District Meats are refurbished, including the bar, which is made from refinished rail car floor boards.
