Chef Lon Symensma of ChoLon, pictured left with chef Charlie Palmer of District Meats, announced on his Facebook page today that he'll be flying to New York City in March to cook at The James Beard House.
Symensma trained under Jean-Georges Vongerichten in Shanghai and at The Spice Market in New York City. He also spent four years in the kitchen at Buddakan in New York City.
The James Beard Foundation, named after prolific culinary mentor and writer James Beard, hosts chefs from around the world for multi-course dinners including beverage pairings with the goal to "educate, inspire, entertain, and foster a deeper understanding of our culinary culture."
Denver chefs that recently made the trip to The James Beard House this past fall as a part of "The Five" concept (though, there were 8 chefs) include Matt Selby of Vesta Dipping Grill and Steuben's, Brandon Biederman of Steuben's, Tyler Wiard of Elway's, Jamey Fader of Lola, Enrique Socarras of Cuba Cuba, Mark DeNittis of Il Mondo Vecchio, Bryan Dayton of Oak at Fourteenth and Paul Reilly of Encore.
