StarLite Diner & Lounge, scheduled to open at the beginning of January at 1750 29th Street in Boulder, will be taking over a venue that has hosted more than 20 restaurants, most recently Ruby's Diner, a 1950s style diner. Westword reports that owner Chris Dailey, also of Street Legal Pizza and Street Legal Burgers in The Flatirons, wants the diner to have a similar "Coco-Cola" feel and that StarLite is both a Diner and Lounge because breakfast will be served in the morning and the space will convert to more of a lounge in the evening, closing at 2 a.m.
