The wait it over, as long as nothing drastic goes down in the next 24 hours. Phat Thai, chef Mark Fischer's first Denver establishment, will open tomorrow. Fischer, who is the chef/owner of Phat Thai and Six 89 in Carbondale, as well as raved The Pullman in Glenwood Springs, says that after a couple months of delays (the restaurant was originally slated to open in October) he's ready to show Cherry Creek what he's about. Inspired by the cuisine of Southeast Asia, the Phat Thai menu is identical to the Carbondale location, but the space itself is twice as large, seating 180 people. With no idea what to expect from Cherry Creek, seeing as Carbondale is quite the different crowd (no, Fischer says it's not just a bunch of hippies and ranchers), he hopes diners take away a profound sense of hospitality, which he believes is the signature of his restaurants.
