Westword critic Laura Shunk has rounded up the openings from 2011 and made some observations. Noting that the majority of Denver's new restaurants — Biker Jim's brick and mortar, Trillium, Pinche Tacos, Coohills, Le Grand Bistro & Oyster Bar — embrace the quality food/casual atmosphere kind of concept, Shunk says Denver is definitely coming into its own. "Denver may not be getting a lot of spendy new restaurants, but it's getting interesting concepts from creative restaurateurs — and diners are embracing concepts they once rejected." [Westword]
