The Ritz-Carlton Denver pastry chef Leslie Ann Viets created Santa straddling a massive blue sugar bear for the holidays. It's seriously all sugar, aside from the gift props. Viets wanted to recreate the large bear statue that peers into the Denver Convention Center. The Denver Post reports that the bear was made out of 65 pounds of fondant, 75 pounds of chocolate, 35 pounds of pastillage, 25 pounds of royal icing and 50 pounds of rice cereal treats.
