T|ACO, the urban taqueria that opened in Boulder earlier this year, will open its Denver outpost in LoDo as soon as this coming Tuesday, pending final certificate of occupancy being issued. The modern Mexican eatery, brought by the same group that created H Burger, will live in the spaced that formerly housed 8 Rivers Modern Carribean Restaurant, shuttered nearly a year ago.
What to expect at T|ACO? The same winning formula created in Boulder by chef Matt Collier: a focus on quality ingredients in Mexican classic tacos with a modern twist. Winning tacos at the Boulder location include the Braised Pork Belly with guajillo salsa, pickled onion, and cotija and the Veggie, a spaghetti squash taco complemented by roasted poblano, red onions, cilantro, and pepitas. The LoDo outpost has a liquor license - tequila-based cocktails and Mexican beers are expected to pop on the menu among other beverage offerings.
