Erik and Shannon Duffy, the dynamic owners of Tender Belly, have grown their business from making five-pound batches for individual restaurant accounts only months ago to distributing 6,000 pounds of pork products a week and now select stores offer some of these to consumers. Look for Tender Belly at Tony's Market locations along the Front Range and at Lucky's Market in Boulder. [DP]
