After much anticipation and weeks of delays, some caused by permits not issued when expected, some by the need to train staff, the Populist is ready to rock and roll. The 60 seat RiNo eatery brought by Noah Price and Jonathan Power of the cultish Crema Coffeehouse, has hosted friends and family this weekend and will open to the public for dinner on Wednesday, November 14.
The menu, focused on small shared plates featuring modern American cuisine, entices with items like apple and parsnip soup with roasted jalapeno caviar, beer-marinated olives & crackers, smoked salmon rillettes topped with creme fraiche, braised beef cheeks with porcini potato smashers, seared frisee and tamari reduction, and butterflied quail in a maple gastrique with mustard greens. The Populist will change the menu with the seasons.
After this week, the Populist will be open from 5 p.m. on Tuesdays through Saturdays.
