Matthew Jansen, chef-owner of both Mateo and Radda Trattoria in Boulder shared with Eater that Edwin Zoe is buying out the existing partners of Radda and will become CEO of the restaurant. Zoe, founder of the point-of-sales system, Aspex Corp. and owner of the popular Chinese street-food joint, Zoe Mama, will come on as a silent partner. Jansen assures his customers that Mateo, will remain the same at its longtime location on Pearl Street. Jansen will remain chef at Radda and plans to focus his time in the kitchen there while the stoves at Mateo are being manned by executive chef Nate Bychinski. When asked about the the power shift Jansen says, "It's a good time for a change. There won't be any crazy changes at Radda, but we will make things better in a few areas."
