At the Bacon and Beer Festival- quite fittingly - chef Justin Brunson of Masterpiece Deli and the anticipated Old Major, a restaurant he plans to open in February, debuted his brand of bacon under the label Denver Bacon Company. Samples were available of the new product and Brunson was pleased with his bacon and playful as ever flipping off the proverbial man who shall remain nameless at this time.
The bacon is produced locally in Colorado, dry-cured, and peachwood smoked, tying-in Colorado's peach-centric Western slope. Slices of pork are cut thick and sweetened with maple sugar. Brunson, who grew up on a farm in Iowa, has been is working on developing the recipe along with his partner Eric Clayman since early 2011. The two are trying to distribute the swine creation through King Soopers in the next several months. "We dialed this in," said Brunson. "It's been a year and a half since I tried to do this, but we are going to start slow," he added mentioning that, for now, the bacon will be available for sale at Masterpiece Deli.
