Corner House, the anticipated Jefferson Park restaurant, announced that it will open its doors bright and early at 6 a.m. on January 4, 2013. The group behind it, which includes chef Matt Selby and his partners James Iacino and Scott Kinsey, was hoping to open before the end of the year, but delays pushed the date back into January.
At the Bacon and Beer Festival, which took place on Sunday at Mile High Station, the Corner House table had not only Selby's bacon, goat cheese, and Tuscan kale tart, but also a full menu for the neighborhood eatery soon-to-open. At first glance, a few dishes stood out: the curry smoked chicken thigh salad panini with colorado brie, pickled onions, and scallion mayonnaise on the lunch menu, the Szechuan pepper venison loin with chanterelle mushroom conserva, tuscan kale, and beaujolais butter sauce on the dinner menu, and the rosemary ginger crème brûlée on the dessert list.
