Under the Sun, a new brew-centric venture from the group that owns the Mountain Sun, Southern Sun, and Vine Street Pub, will open in Boulder in January, the Denver Post reported today. Unlike the three sister brew-pubs, Under the Sun will have a staff dedicated to the kitchen, with former Boulderite and Top Chef contestant Melissa Harrison consulting on the menu. A wood-fired oven will be used to make items like flatbreads, roasted chicken, or roasted pork chops and over 30 beer taps will be added to the bar, 21 pouring Sun beers and another 10 or so reserved for guest beers.
