jimnnicks.jpg Jim 'N Nick's BBQ chain, which has locations in Aurora and Northfield, is going whole hog. The Washington Post reports that owner Nick Pihakis is investing a lot of money and energy to make his chain more sustainable, which includes building his own pork processing facility. Pihakis is currently trying to draft 40 farmers to each raise 400 heritage pigs on an annual basis. “We are going to crack the myth that it costs more money to do this. Once people see it can be done, a lot of them will want to jump on board.” [WP]
