Cellar Wine & Salumi Bar, recently recognized by 5280 and Westword as one of Denver's best wine bars, could very well turn into one of Denver's best pasta destinations. Chef Joe Freemond, who worked under chef Troy Guard at TAG, Samir Mohammad at The Village Cork, and with Mark DeNittis at Il Mondo Vecchio Salumi, now runs the kitchen. And as of this past Tuesday, Cellar now offers a small dinner menu in addition to the bar's popular tapas and salumi offerings. Freemond has recruited John Wallace (sous chef) and Will Sumner, both TAG and Row 14 vets, to further expand the menu at Cellar. Freemond tells Eater that the new team will introduce a small menu of handmade pastas next Friday. Sipping wine at Cellar just got a whole lot better.
