Eater reported earlier this week that chef Troy Guard's first T|ACO taqueria, a joint project with H|Burger Co, will open in the former Boulder Organic Pizzeria space in Boulder, and today more juicy details have come into play. Penny Parker, former Denver Post business reporter and current Blacktie-Colorado blogger, writes that Guard's "hip-ghetto" Denver taqueria will likely go into the former 8 Rivers space at 1550 Blake St., pending an official lease-signing next week. Guard says T|ACO Boulder will open in May with a menu featuring 10 tacos, salads, dips, tamales and ceviche. “The kind of food I like to eat," Guard says. "I think Mexican food is making a comeback with a twist.” For now, T|ACO Denver is slated to open sometime in August.
