If all goes well, Fire on the Mountain, a Portland-based wing joint, will hopefully open its doors this Thursday in the Highlands.The company needs to pass its health inspection and receive a liquor license, but otherwise, it's ready to start serving wings. The FOTM menu features a variety of Colorado craft brews that pair nicely with FOTM wings (guests can order in increments ranging from 6-250 wings), vegan options, sandwiches, burgers, salads and fried novelties. The place is really known for its 12 speciality sauces though, including spicy peanut, raspberry habanero, bourbon chipotle, lime cilantro and the spicy "El Jefe," which Thrillist says is "hot enough to 'double as a bear-repellent,' and, ironically, put some fur on your chest." When the restaurant does officially open, hours will be 11 a.m. - 11 p.m., Monday-Sunday.
