Denver's H|Burger Co is quickly expanding into Boulder with the new acquisition of The Pinyon space (1710 Pearl St.), and the launch of T|ACO taqueria in the former Boulder Organic Pizzeria spot (1175 Walnut St.). Whitney Olmsted, chief operating officer of H|Burger Co, tells Eater that H|Burger Co Boulder will open by May 1st, and T|ACO Boulder, a collaboration with Denver chef Troy Guard, will open within the week.
Olmsted says H|Burger Co Boulder will mirror Denver's LoDo location, offering burgers and specialty cocktails, including the signature liquid-nitrogen milkshakes. Exclusive to the Boulder menu, however, the company has added a local grass-fed burger. As for T|ACO, Olmsted says the taqueria will offer high-end bites, ala carte tacos, fresh ceviche, fresh salsa, fresh chips and a variety of tequilas. The T|ACO menu will also include tequila flights and taco tastings. Look for an opening announcement later this week.
