Last week Eater noticed that that Marco's Coal-Fired Pizza was going mobile, and sure enough, owner Mark "Marco" Dym is getting ready to debut his mobile pizza oven later this spring. Dym tells Eater that the oven has to pass a health inspection, but it's only a matter of time before Marco's can show up at parties, weddings and sporting events. "I really see the mobile oven as a catering tool. I really searched out an Italian oven that would be similar to what I work with at the restaurants —something that would produce the same product that I do here." Dym isn't sure if he'll join food truck gatherings, but hey, anything is possible now that he has wheels.
