Pizza Republica's Pizza di Fiumicino, Expansion Plans

Ever tried of Pizza Republica? For those who spend time near the Denver Tech Center, that's probably an enthusiastic "yes," but for who rarely leave the urban boundaries of the city, chances are you hit up something closer to home. Not only does this place specialize in Neapolitan-style pizza, but it's also features an extensive wine list — we're talkin' upwards of 130 wines, with 30 of them available by the glass. In a little over a week, owner George Eder will introduce an additional 20-30 wines to his list, including Pizza Republica's own chianti label.

For Eater's Pizza Week, Eder is featuring a rather intense seafood pizza over the weekend for $16.95 — Pizza di Fiumicino, a pie topped with seared scallops, sous vide calamari, grilled shrimp, steamed mussels, preserved Lemon cream, fresh mozzarella, lemon zest, roasted red peppers and fried capers. Look for the new wine list May 21st, and be on the lookout for Pizza Republica expansion updates, because Eder tells Eater he's bringing his pizza downtown within the year.
