It looks like H|Burger Co. found an executive chef for T|ACO taqueria, and it's a guy who's been involved even before chef Troy Guard's departure. Matt Collier, previously the sous chef of The Kitchen in Boulder, has been named the executive chef of T|ACO Boulder and Denver. Collier tells Westword that he was recruited before Guard bowed out of the partnership: "I saw the ad for a taqueria, responded to it and Troy got in contact with me pretty quickly, and while he changed his mind about being a partner, everyone at H Burger wanted to move forward with me." While Collier has spent four years executing The Kitchen's acclaimed farm-to-table fare, he's not a stranger to the world of taquerias. Collier's kitchen resume includes Big Star taqueria in Chicago, as well as Blackbird, the Drawing Room, Boka, Publican and Avec.
