H|Burger Co., a Denver-based burger joint, has successfully flipped the former Boulder Organic Pizza space into T|ACO, a brand spankin' new "urban taqueria" (apparently they pitched Troy Guard's "hip-ghetto" description) that specializes in global tacos and tequila. Headed by chef Matt Collier, who reigns from The Kitchen and a handful of Chicago hot spots, T|ACO's menu caters to brunch, lunch, dinner and late-night crowds. T|ACO will also serve ceviche, tamales, salads and mexican pizzas — not to mention gluten-free and vegetarian options. Assuming opening operations run smoothly today, T|ACO will open tonight at 5 p.m. for dinner. Look for T|ACO Denver later this summer.
