johnbroening.jpgChef John Broening of Duo, Olivéa and Spuntino was up in Aspen for the Food & Wine Classic this past weekend, and it appears words from Mario Batali stuck with him — he penned an entire column in The Denver Post about the guy. Batali: "In Italian food, the ego of the chef is less significant than the chance to please with the best possible ingredients." Broening: "Though Batali is hardly egoless, few chefs have given or communicated so much selfless pleasure to so many." [DP]
