With the exit of Lime and the addition of Tom's Urban 24 Diner on Larimer Square, the dining scene is certainly changing. Joe Vostrejs, chief operating officer of Larimer Associates, tells The Denver Business Journal that the goal is to diversify dining options as much as possible: “I’m a big fan of the saying no one will walk by Starbucks to go to another Starbucks."
