Kachina Southwestern Grill, the new concept opening inside The Westin in Westminster, has remained somewhat of a mystery — until now. The restaurant, created by Denver's Sage Restaurant Group, opens next Thursday, September 6th, and executive chef Patrick Hartnett tells Eater that Kachina will be a compete detour from what one might expect out of a Westin. Not only will the dining room convey the Southwestern vibe of Santa Fe, but the entire menu will emphasize the cuisine Hartnett grew fond of while heading the kitchens at Sante Fe's Red Sage Restaurant and Bistop's Lodge. "It's Southwest cuisine, specializing in game and ingredients from the Southwest," Harnett says, adding that the rustic approach will be present in every aspect of the restaurant, including the patio fire pit and the adobe-style design elements in the dining room.
