We have so much talent here in our local dining scene that it's hard to narrow it down — but I'd have to say I am a HUGE fan of Jonathan Greschler, a bona fide staple in our Denver dining community and an all around great guy.
I've known him for a hundred years... well, maybe not a hundred years, but a long time. I spent a good number of those years admiring his ambition and talent, and when I hired him on as our opening GM for TAG I was really excited. Unfortunately our time got cut short at TAG, and when it came time to find a great beverage mind for this year's FIVE, I knew he'd be a great fit for my lil o'l culinary super group! Over the years he has become an indispensible addition and a great leader for this year's group.
He absolutely personifies what a FOH guy should be — kind, intelligent, a great teacher, street-smart and people-savvy. I've had the pleasure of working with Jonny during two different stages of his career, and it has been awesome to watch him grow into the kick-ass guy that he is today. One of the biggest kicks to me, being in the business, is watching bussers become bartenders, and runners become line cooks. To watch Jonny go from running Proto's to his new gig at Old Major just gives me chills. Weird I know, but I truly can't wait to see him shine there!
