Tender Belly, a Denver company owned by brothers Erik and Shannon Duffy, makes the bacon with the most buzz these days. Here are some of the most creative uses of bacon on Denver restaurant menus.
Bacon Tacos: Comida, the hot pink food truck and Longmont cantina, makes a bacon and jalapeno taco served on a griddled soft corn tortilla.
Bacon Pizza: Pizzeria Locale just added a new pizza on its fall menu- the Fichi Pizza with black mission figs, Tender Belly bacon, medjool dates, verde capra cheese, shallots, and balsamic.
Candied Bacon Bloody Mary: Fuel Cafe's brunch menu includes two Bloody Mary variations - the Bloody Buddy (gin, vodka or tequila with house mix) and the Green Bloody (gin, vodka or tequila with tomatillo mix). Both of these are garnished with a large strip of candied and sprinkled with a dash of cayenne Tender Belly bacon.
Tender Belly makes its bacon with Iowa Hampshire pork belly, hand-rubbed with a maple and spice mixture and slow smoked over cherrywood.
