Moontower Tacos, a new taco-centric restaurant, will open in the former Thai Mango space located at 609 Grant Street in the Capitol Hill. First-time restaurateur and Austin-native Brent Thrash, went to college at the University of Colorado in Boulder and, while he loved the Colorado, he missed the Texas tacos he was used to. Now, Thrash wants to bring those tacos to Denver with this new venture.
The Moontower Tacos menu is extensive and includes a variety of breakfast offerings like the MilGAS, made with scrambled eggs, crispy tortilla strips, fresh avocado slices, pico de gallo, Mexican mashed potatoes and queso, tacos with a twist, like the Colonel, prepared with fried chicken, lettuce, pico de gallo, shredded cheese, and chipotle ranch, and other offerings like quesadillas, chimmichangas, and more. There is a liquor license application pending for the restaurant that plans to be open seven days a week for breakfast, lunch, and dinner.
