Eater Special Drinks at Five Bars: Maeby From Amy Kempster of Colt & Gray

To celebrate Cocktail Week, Eater teamed up with some of our favorite bars around town and asked them to create special drinks. While last year we reached out to no less than twenty watering holes for special drinks, this time we chose only five to feature specially crafted Eater Cocktail Week drinks. The five bartenders who created the drinks are all women and each of them chose one or more Colorado spirits to mix in their beverages. They are not only offering these cocktails at their bars all week, but they also shared the recipes so you can make them yourself.

Yesterday, Allison Widdecombe of Williams & Graham shared Leo's Revenge. Today, Amy Kempster of Colt & Gray serves up the Maeby. Before we share that recipe, we encourage you to go to Williams & Graham and Colt & Gray for those drinks. And while you are out, try the other three special Eater cocktails: the Tartan Spritzer created by bartender Kyla Ostler at the Kitchen, the Press & Cask from bartender Regan Horacek of Ace, and the Vice President from bartender Alex Parks of Acorn.

A native of Casper, Wyoming, Amy Kempster is a paralegal by day, but she has making appearances in the restaurant world for years because she finds it exciting. She spends much of her spare time studying the beauty of the classic cocktails that existed before Prohibition and all of the crafted spirits that exist today. She selected Rob's MTN Gin as her local spirit of choice "because it is delicious," she says. Crafted in the American-style, this gin is distilled in two separate batches— first with just juniper and second with several other botanicals. "This method, in my opinion, creates a wonderful balance to each aspect of the gin. It is amazingly smooth, full of strong botanical flavors, and easy to blend with additional flavors," Amy explained.


The Maeby
Ingredients:
2 oz. Rob's MTN Gin
.75 oz. Cardamom Simple Syrup
.75 oz. Lime Juice

Combine the ingredients in a shaker and shake. Strain it into a rocks glass over a large cube of ice. Garnish with Cardamom-infused Angostura.
