Pollyanna Forster, longtime Vail resident business owner and also co-owner and operator of LoHi's wine & cheese bistro Eat+Drink, was recently named Entrepreneur of the Year by the Vail Valley Partnership. The honor highlighs the spirit of innovation, drive, and business savvy.
Forster has been in the restaurant business for several years. In 2004, she and partner Chris Irving opened their first shop in the Vail Valley. Eat! Drink! is Edward's original wine and cheese playground offering over a hundred artisan cheeses, wines by the glass, gourmet foods, and a boutique wine shop. In 2006, Dish restaurant followed, focusing on international cuisine using local ingredients with a creative twist. By 2008, Forster and Irving had opened Cut, an artisan meat and seafood store providing local meats and sustainable seafood, along with other specialty foods. Last summer, the team busted in on the Denver scene to great reviews with Eat+Drink in LoHi.
