Moontower Tacos Opened Last Week in Capitol Hill

Moontower Tacos, a new taco-centric restaurant from Austin native Brent Thrash, opened quietly on February 22 in the former Thai Mango space located at 609 Grant Street in the Capitol Hill. Thrash, a first time restaurateur who went to college at the University of Colorado in Boulder, decided to bring his beloved Texas tacos to Denver with this new venture.

Open 7 a.m. to 9 p.m., Moontower Tacos serves a large selection of tacos from breakfast offerings like the MilGAS, made with scrambled eggs, crispy tortilla strips, fresh avocado slices, pico de gallo, Mexican mashed potatoes and queso, to tacos with a twist, like the Colonel, prepared with fried chicken, lettuce, pico de gallo, shredded cheese, and chipotle ranch, and other offerings like quesadillas, chimmichangas, and more. There is a liquor license application pending for the restaurant.
