Rumblings of new ventures from Troy Guard, the chef and owner at TAG and TAG Raw Bar and the operating partner at TAG Burger Bar, have been getting louder and louder since late last year. This morning, 5280's Table Talk confirmed that Guard will open a taqueria and a bakery right at Broadway and Larimer at the edge of the RiNo neighborhood.
The location is right behind Billy's Hot Dogs, in a spot that is now a parking pot, Guard confirmed in a phone conversation. He is currently working on design with Xan Creative, a company that also created the space at ACE, Snooze, and Marco's Coal Fired Pizza.
As for the food at the yet-to-be named taqueria, "I will be doing what I like in Mexican food," Guard said. "A taqueria is focused on tacos, but we will do more than that. There will be ceviches, salsas, tamales, burritos, enchiladas, and more," he added.
The other part of the venture is what Guard called a dessert restaurant: "a dessert/bakery where we'll do some things with bread but also make the pastries here and deliver to my other restaurants." Pastry chef Noah French has worked with Guard in a consulting role at TAG for a long time, but last fall he moved to Denver from Barbados and wanted to do a dessert place. This place will serve breakfast, lunch, dinner, and Guard's vision is that it will be a casual neighborhood place where guests can grab a croissant and a cup of coffee, a sandwich, or a cocktail, depending on the time of the day and the mood of the guest.
