Cochon 555, the traveling culinary competition and tasting event created to promote sustainable farming of heritage breed pigs, will host its Vail edition on March 10 featuring five Colorado chefs - Kelly Liken of Kelly Liken Restaurant in Vail, Alex Seidel of Fruition, Lon Symensma of ChoLon, Jason Harrison of Flame Restaurant, and Hosea Rosenberg of Blackbelly Catering. These five chefs will use five heritage pigs provided exclusively by Tender Belly to prepare a snout-to-tail feast for the 400 guests that will attend the competition.
Tender Belly is procuring all of the heritage breed pigs from small family farms in Colorado and Iowa. The heritage breeds that will be featured are American Berkshire, Red Wattle, Large Black and Mulefoot. Tender Belly will also be the bacon sponsor for the event.
