Early this morning, Boxcar Coffee Roasters, a Boulder-based coffee roaster, started brewing coffee at its new location in Denver in the DRIVE building on the TAXI campus. Several city permits delayed the opening, but the owners, Vaj and Cara Rich, are excited to finally be able to bring their coffee to the RiNo neighborhood. The coffee shop brews the beans it roasts in Boulder and offers a well-edited menu of specialty coffee drinks.
Boxcar coffee will be served on weekdays from 7 a.m. to 5 p.m. and on weekends from 8 a.m. till around 1 p.m. The weekend schedule is still subject to change.
The coffee shop shares an 1800 square foot space on the first floor of the four-story DRIVE building with reFuel, a more casual, sandwich-driven version of Fuel Cafe. ReFuel got the sign off on its last permit from the city this morning and will start serving breakfast and lunch in the next couple of days.
