Karin and Rob Lawler, the husband and wife team behind the Truffle Cheese Shop, are preparing to open a new venture: the Truffle Table, in the heart of the LoHi neighborhood. The Truffle Table will occupy the space located at 2556 15th Street, which, most recently was home to the Cellar Wine Bar. The Cellar Wine Bar closed in the last week and the Lawlers have finalized the paperwork to take over the space.
"We are super excited to open this in our own neighborhood," Karin Lawler said. "It is just a great opportunity to build on the Truffle brand and expand what we do," she added. This new LoHi cheese bar will focus on serving primarily ...cheese. There will be accouterments and wine pairings, but the goal and mission of the new venture is to continue to spread the gospel of good cheese in an atmosphere that encourages both the experiential and educational component. "What people like at the Truffle Cheese Shop is the experience- the aromas in the air, the look of beautiful cheeses treated with respect, and the process of seeing them cut right in front of them," Karin explained.
The offerings will consist of a variety of cheese plates but also salads and well-crafted desserts. The goal is to bring in cheesemongers and do tastings and educational gatherings, an element that has been very popular at the Cheese Shop, and host special casual nights like all-you-can-eat cheese fondue where the melted raclette will be flowing freely.
The main management team will remain the same with Karin and Rob sharing duties in running the business and current Truffle Cheese Shop manager Miguel Vera moving to the new location. "Miguel has a great background and a great palate. He will run the pairing program at the Truffle Table," Karin said.
In the next two weeks, the space will get a fresh coat of paint and an updated look. Right now, there is a wine and beer liquor license that will remain in place, but the team at the Truffle is considering pursuing a full liquor license in the months to come. The Truffle Table is expected to open its doors around May 21, although that date is not firm quite yet. When it opens, it will serve guests Tuesday though Saturday, from late afternoon to 11 p.m.
