Today, Elway's opens its doors to travelers at the Denver International Airport in Concourse B, where it promises to serve Colorado-centric dishes daily from 7 a.m. to 11 p.m. in a space that can host up to 147 guests.
Named for NFL Hall of Fame Inductee, Denver Broncos Executive Vice President of Football Operations and former quarterback John Elway, the new Elway's restaurant will add more options to the increasing number of Colorado-based restaurants at the airport, with Udi's (already operating) and RootDown (opening soon), among them.
"The airport is actively transforming many of its concessions in the coming years to give travelers options from local, national and international brands," says Kim Day, DIA's Manager of Aviation. "Elway's is in the unique position of being an iconic Colorado brand with international name recognition. We're proud to welcome Elway's to DIA, and we look forward to adding additional dynamic dining and shopping choices for our passengers soon," she adds.
This will be the fourth Elway's in Colorado joining the flagship location in Cherry Creek and restaurants in Downtown Denver in the Ritz-Carlton and in the Lodge at Vail.
Elway's was founded by John Elway and Tim Schmidt in 2004 when it started serving U.S.D.A. prime hand-cut steak, fish, and a variety of entrees and side dishes from culinary director and former Top Chef contestant Tyler Wiard. Elway and Schmidt have chosen DIA concession veterans David Mosteller and Dennis Deslongchamp as licensees for the DIA restaurant.
"John Elway is synonymous with Denver, so Elway's DIA will give travelers a unique opportunity to experience the best Denver has to offer," says David Mosteller, a principal in the DIA location.

The new Elway's will offer breakfast and express take-out service along with lunch and dinner daily. Signature dishes include hand-cut, aged USDA prime steaks, seafood and shellfish, Colorado rack of lamb, and Elway's staple Smash Burger. Side dishes include au gratin potatoes and creamed Corn. Breakfast guests may enjoy USDA prime beef hash, a chicken fried steak burrito, omelets and housemade granola. Elway's will also have a full bar and creative wine list with 33 wines by the glass, 59 by the bottle, and 4 on tap.

At 3981 square feet, Elway's DIA will reflect the design and ambience of the Cherry Creek location, with added features such as wide aisles and an express counter to accommodate travelers. Highlights of the space include an onyx natural stone bar, limestone tile flooring, leather upholstery, and dark woods aimed to create a welcoming, comfortable environment to provide a retreat from the stress of traveling. Additionally, the restaurant will feature retail and memorabilia displays and glass dividers to enhance intimacy.
