Tomorrow, June 25, the new JAX Oyster Bar located at 650 S. Colorado Boulevard in the City Set development will open its doors to the public. The restaurant is located just south of Cherry Creek, neighboring World of Beer and soon-to-open locations of Udi's Cafe and Cuba Cuba Sandwicheria. The restaurant has with 200 seats on the ground floor with an indoor-outdoor seat configuration and a 110 seat rooftop patio with great views of the mountains and more.
The space was designed in collaboration with Jim Bray and built by Spectrum and features some familiar JAX elements: a wood-cutout installation that resembles the hull of a boat hanging over the bar, a large aquarium, two oyster bars, as well as a counter for hot steamer pots, a new way of cooking and serving that JAX introduced at its LoDo location earlier this year.
