Common Link Food Truck to Revamp The Menu at The Mayor of Old Town

Starting next month, Fort Collins' Common Link food truck with join forces with the beer bar The Mayor of Old Town, completely revamping the menu with their own Belgian-comfort-food spin.

Common Link is owned and operated by the husband-wife duo Derrick Smith And Jesse Doerffel, who have spent their careers in food service and fine dining in Maui, San Francisco, Los Angeles, and Denver. Their new business is a more casual version of their food expertise, specializing in sausages and handcut Belgian-style fries that they serve with a variety of sauces: curry ketchup, chipotle mayo, ghost chili barbecue, and their token Elementary School Fry Sauce, which they say is "ketchup blended with mayonnaise and classed up with spices."

Common Link is focused on bringing Fort Collins residents good food from their own backyards. They source just about everything they make locally— the greens in their salads come from nearby farms, their burgers are made from Colorado Black Angus Beef, and the cheese curds for their infamous poutine come from Cozy Cow Dairy in Windsor, Colorado. Cozy Cow is also working on a new ice cream that will be exclusive to Common Link and The Mayor of Old Town. Jesse says it will make for a great ice cream and stout float.

More often than not, the truck is posted up outside of New Belgium or Odell Brewing Company, serving their selections paired with local craft beer. They'll take those food and beer pairings inside at the beginning of July when they introduce The Mayor of Old Town's new menu. "The beer [at The Mayor] rotates so much, so we will be suggesting different styles of beer to pair with our menu," says Jesse.

The new menu will include breakfast, lunch and dinner items like spent grain pancakes, mini donuts with maple bacon glaze, a roasted red bird chicken sandwich with tarragon aioli on a French roll, their flagship poutine and seasonal salads.

The Common Link truck will still be set up at Odell on Saturdays and at New Belgium on Tuesdays and Thursdays through August. When school starts at Colorado State University they'll set up on Pitkin Street Monday through Friday from 10 a.m. to 2 p.m, and continue serving at Odell's parking lot on Saturdays.
