The Merlot burgers- seven of them- are about to unleash their grapey force upon the Boulder diners as Drakes Haus opens its doors this coming Friday in the new Baseline Crossing development off US 36 and Baseline Road. In the meantime, to work up the appetite, some details and a sneak peek into the space are available.
The two-story modern space was designed by Semple Brown, a premier design firm whose work includes Frasca Food and Wine, the Squeaky Bean, and Coohills. There are two bars, one on the first floor and another in the lounge-style second floor. The interior is simple - dark woods and industrial metal, several community bar-height tables, and a couple of softer accent walls clad in wood. The second floor bar and lounge comes with an attractive patio that gives diners a view of the Flatirons.
The bar program features several Colorado craft beers on tap, craft cocktails, and wines from around the world. On the food menu, there are seven signature Merlot burgers (an original creation of chef-owner Kimber Hollar), as well as ten small plate style dishes, specialty fries, as well as milkshakes. Vegetarian and wine-free options are available.
The burger joint will open its doors on Friday, June 28 and will serve lunch and dinner seven days a week, until 1 a.m. on weekends. A late night menu will be available.
