Fort Collins' JAWS Sushi is now open for business in the Campus West area. Its four chef-owners are rolling out sashimi, nigiri and maki rolls, in addition to a menu packed with strangely named specialty rolls and inventive appetizers like the deconstructed caesar salad with fresh anchovies.
