Crooked Stave, the artisan brewery specializing in Belgian sours, will open at the Source with an new yet old-school piece of equipment, a coolship, Cafe Society reports. A coolship is a large, rectangular, and shallow pan that beer-makers used to naturally cool down their boiling wort (unfermented beer). Chad Yakobson, the mastermind behind Crooked Stave will use it to add different ingredients to his brews, including hops and spices. [Cafe Society]
