After eighteen years, Restaurant Japon on Old South Gaylord Street is suspending its operations on October 31. Owner Miki Hashimoto is taking a break to focus on his next concept in Asian Fusion cuisine, slated to open in early summer 2014. In a press release, Hashimoto said "I have some great new ideas and concepts that I'm exploring and that Denver hasn't seen. I'm planning a new location, a new environment, in a new setting." The new owners of the old Japon space will likely reopen as an Asian concept in the spring 2014. [Eaterwire]
