Corvus Coffee's Now Brewing on South Broadway

The highly anticipated opening of Corvus Coffee is upon us. The shop, started by Phil Goodlaxson in 2010 has gone from Arvada to Denver, where it used to wholesale out of a building at 1947 S. Broadway, celebrates its grand debut at 1740 S. Broadway today.

What to expect from Corvus: a retail tasting space, where you can order fresh roasts from artisanal coffee purveyors across the globe; the ever-revolving selection of beans is handpicked by Goodlaxson and the retail manager Dave Puchta, organic teas from Silk Road Teas; bakery items from Boulder's Breadworks Bakery and Cafe; coffee tasting and roasting classes; and a lot of commotion in the background.


Albeit a small space, Corvus plans to roast, package, ad distribute all of its coffees from the new location, which will be open to the public every day from 6:30 a.m. to 6:30 p.m.

Fresh on the market is Corvus' Barrel Aged Series, green coffee beans aged on whiskey barrel wood. "Green coffee is very porous and will absorb a lot of different volatiles if exposed to them. the concentration of whisky volatiles in the wood, and the wood itself, soak into the bean and are released when we roast it," says Goodlaxson. He is partnering with former Stranahan's distiller Jake Norris on this project.
