Denver seems to be a magnet for fast-casual eateries. This week, Miyabi Jr. Japanese Express opened in the Tiffany's Plaza at 7400 E. Hampden Avenue. This is the ninth location for the small chain. The restaurant specializes in authentic Japanese hibachi style grilled, fresh food that is quickly prepared in five to eight minutes.
Miyabi Jr. arrived in Denver via a partnership with a Denver-based operator and several Japanese restaurant investment groups. The investment groups have restaurants throughout Asia, yet this is their first venture into Colorado.
The Denver spot is managed by Junya Nakajima. The Mile High City was selected as the company's next expansion destination because of the "young and sophisticated local market" and the "lack of authentic, affordable restaurant options for Japanese food," said Japanese investor, Seiki Takahashi. As many as five more Miyabi Jr's could open in the metro area within 24 to 36 months.
