The Wait Is (Almost) Over: Sarto's in Jefferson Park

The chef-driven, highly anticipated Italian eatery has two sets of doors opening next week.

The amount of coverage and the following developed by co-owner and chef Brian Laird's distinctive Italian spot is no mistake: it's been a long time coming.

Sarto's, located in the growing Jefferson Park at 2900 W 25th Avenue, will finally welcome its first guests on October 28. Earlier coverage of the opening speculated a mid-summer opening, so crowds are expected to quickly fill the space in search of chef Laird's Italian-inspired cuisine. Diners will even have the option to experience an authentic cicchetti bar for small bites and drinks.

Almost a year's worth of effort has gone into the physical space in an effort to create the unique food and drink-forward social environment. Among the highlights of the buildout was the installation of the artisan oven that will be used to crank out much of the menu.

Just five days after the restaurant doors open, the adjacent space will go live as well. Sarto's Pantry will host a market-like setting where guests can choose from a myriad of grab-and-go items like breads, housemade pastas and salads. The Pantry will be open daily from 11 a.m. to 8 p.m.

Sarto's will be open for dinner Tuesday through Sunday, 5 p.m. to 10 p.m.
