By the end of the year, Fort Collins will have another eatery with the addition of RARE Italian. The latest venture from the Rio Grande Mexican group is set to make its home at 101 South College Avenue, previously the site of Kansas-based Ingredient.
Anticipating a mid-December opening, RARE will put a contemporary spin on cucina povera, which refers to the rustic, "peasant" fare of Italy. "The desire to create an Italian concept that blends a contemporary look and feel with a menu that pays homage to truly traditional Italian cuisine is a personal one," says CEO Jason Barrett, whose maternal grandfather was a first-generation Italian.
Look for a menu of dry-aged grilled steaks, handmade pastas, and charcuterie, with all recipes made from scratch. The wine list will hit all the Italian classics, from Chianti to Nebbiolo.
